Whats The Wild Got For Us This Week ??

Now some dampness has come back to the land we are starting to see new growth of the second wind of wild edibles. Items such as dandelion, nettles, plantain are all starting to show there buds again through the dry and deadness that hangs above them.

One thing to notice though is that the trees are way in front just check out your nearest conker tree look at the leaves !!!

The arrival of autumn is most definitely inbound (oh my word)

    Now we are getting deeper into the amazing game season heather blossom is a perfect garnish for all your game dishes.

    Although it adds a beautiful colour to the dish it also deliveries on the nose as its fragrant if heated.

    It will be around a good three weeks then will disappear for another year so make sure you get a punnet or two in to try before it vanishes for another year.

    Rowan trees are in places you would never expect and the majority of people don’t even realise they are edible and the berries host a most fantastic flavour profile.

    Great dropped into sauces to add an acidic twang or stewed down into a chutney or creative wild seasonal jelly – ( now there's an idea!!!)

    For those of us that love sea purslane for those salty notes and remarkable leaf structure we are in luck as the season for this wild versatile plant is at its peak and quality is jaw-droppingly beautiful.

    Birch Sap Syrup **In Stock**

    James has been slowly maturing his harvested birch sap which he tapped back in April.

    It has now been reduced to a most delightful syrup that is packed with a sophisticated sweet flavour like you have never tasted before.
